The place where northern Italy meets Scandinavia, Brace in Copenhagen creates a fusion between New Nordic and Italian gastronomy. The restaurant is run by the former Era Ora Michelin chef Nicola Fanetti, who applies his particular skill set to create innovative and delicate dishes that combine Nordic elegance with Italian simplicity. Guests at Brace can choose between a 5- or 8-course set menu that leads the diner on an exquisite culinary journey through the two regions. Produce is sourced from local farmers and foragers, and each dish is created to allow the freshness and specific characteristic of the individual ingredients stand out. Only carefully selected seasonal and organic produce are used by the Italian chefs, who embrace the simplicity of Nordic cooking techniques.
