The core philosophy at restaurant Brace in central Copenhagen is to create a fusion between New Nordic and Italian gastronomy. The restaurant is run by the former Era Ora Michelin chef Nicola Fanetti, who applies his particular skill set to create innovative and delicate dishes that combine Nordic elegance with Italian simplicity. This approach has won the restaurant much critical acclaim and a ‘Master Class’ nomination in the White Guide.
Guests at Brace can choose between a 8- or 12-course set menu that leads the diner on an exquisite culinary journey through the two regions. Each dish is created to allow the freshness and specific characteristic of the individual ingredients to stand out. Only carefully selected seasonal and organic produce are used.
Brace also offers carefully curated wine menus that match and compliment the food. The menus are created by sommelier Felix Chamorro, who favours wines from lesser-known producers that rely on traditional, natural and sustainable wine producing methods. Guests can expect wines from countries such as Greece, Georgia and Slovenia rather than the more classic districts.
